cheeze pizza on steroids

I love pizza. It has always been one of my favorites, even before going vegan. Surprisingly, I still loved pizza after the switch. Have you ever had a pizza with amazing sauce and perfectly roasted veggies with no cheese? You should, because it is delicious. I’ve had homemade veggie pizza with vegan cheese, I’ve had frozen vegan pizzas from Tofurky and I’ve experimented with unusual toppings (arugula, butternut squash and caramelized onion)- all of them are delicious. But I don’t think any of them top today’s pizza.

Today at the grocery store, I splurged on a gluten-free, dairy-free cheese pizza from Amy’s. I was looking for a veggie pizza but there wasn’t really anything that fit what I wanted. Besides, when I bought frozen veggie pizzas (pre-vegan) in the past, there were never enough, nor the right kind of vegetables. So, today I had an idea to buy the cheeze pizza and add my own veggies. I am SO glad I did, and if you try it I know you’ll be glad too.

This is THE most delicious pizza I think I have had to date- dairy or non. I added roasted red pepper, steamed broccoli, caramelized onion, frozen spinach, some freshly ground salt and pepper, and red pepper flakes. The gluten-free crust is the closest thing to the wheat that I have ever tasted and the soy cheese is the perfect texture/consistency. I think this is a new addiction!

I am thankful to have been invited to Thanksgiving dinner with the wonderful family that I nanny for. Baby Julia’s parents are two of the kindest, most unselfish people I know and I am so happy they are in my life. There was a mid-sized gathering of friends for bloody marys, champagne, bocce ball and delicious food.

Susan and Andy were so kind to ask their guests to bring healthy/vegan-friendly sides for dinner. So, aside from the turkey and omni-stuffing, pretty much everything was vegan. I was able to stuff my face full of glorious things. ;)

Cranberry sauce, coconutty sweet potatoes, brussels and beets, green beans, asparagus, vegan sausage and cornbread stuffing and an amazing squash/celery root/turnip/nut cheese layered dish. Not to mention the vegan pumpkin and vegan Grand Marnier chocolate pecan pie!

choose the bike

I recently saw a version of this print on facebook and fell in love. The artist, Adam Turman, is extremely talented and I definitely want to own some of this prints.

I always choose my bike because, well, that is my only option. However, I have friends who have the option to drive and even on the most miserable of days- they will choose to bike. Just this Sunday, I invited a new friend to accompany me to a movie. As it neared time for me to leave, I was dragging my feet- not looking forward to going out in the single digit weather- but what choice did I have? I arrived at the theater to find my guest’s bike already locked to the rack. He had ridden further than I in the sub-freezing weather- by choice.

It warms my heart. :)
